Veggie Breakfast


Everyone in the UK will have their own slant on the fried breakfast

And contrary to popular opinion that it is a dirty treat
It can be, with a few tweaks, quite a nutritious start to the day
With nutritional yeast mixed into the beans
Switched to a Veggie version to keep it under control
And using healthy fats
You are onto a tasty winner
(Made and tested 23 times)

Ingredients

  • Oil (1 Tbsp)
  • Veggie Sausages (2)
  • Mushrooms (1-cup)
  • Canned Tomatoes (½ can)
  • Baked Beans (½ can)
  • Nutritional Yeast (1 Tbsp)
  • Eggs (2-med)
  • Cottage Cheese (1-tbsp) (opt)
  • Wholemeal Bread (1-slice)
  • Butter 

Method

Turn the oven on low and warm a plate
Put 2 tsp of oil in a small frying pan
Add 2 quorn sausages cover and fry
Chop 150g of mushrooms and add to the sausages
Put half a can of baked beans in a small saucepan
Add 1 Tbsp of nutritional yeast to the beans and heat on low
Put mushrooms and sausages and beans onto the oven plate
Add half a can of chopped tomatoes to the small saucepan and heat up
Crack 2 eggs into a mug and mix up. Or simply fry two eggs now in a small frying pan if you want them fried
Option if scrambling add 1 Tbsp of cottage cheese or some milk or yoghurt to the egg
Put egg mix into small frying pan
Pop 1 slice of wholemeal bread to the toaster
Add everything together and away you go
