A fairly standard shepherds pie Made with quorn mince Or a soy mince Switch for minced beef if you like But brown the mince seperately early on in a frying pan And make sure is cooked nice before you top with potato (Made and tested 13 times) 3 Servings
Ingredients
Potatoes (700g)
Oil (1 Tbsp)
Onions (2 med)
Garlic (3 cloves)
Mushrooms (250g)
Frozen Peas (1 cup)
Quorn Mince or Beef Mince (300g)
Mixed Herbs (2 tsp)
Soy Sauce (2 Tbsp)
Worcester Sauce (1 Tbsp)
Tomato Puree (2 Tbsp)
Stock (2 cups/500ml)
Greek Yogurt (4 Tbsp)
Cheddar Cheese (100g)
Method
Chop 700g of potatoes with skins on if poss
Boil potatoes in their own pan
Put 1 Tbsp of oil in a large pan or preferably a large casserole or dutch oven
Chop 2 med onions and add to the pan
Cook onions on low
Crush 3-5 cloves of garlic and add to the pan
Chop 250g of mushrooms and add to the pan
Add 2 Tsp of mixed herbs
Add 2 Tbsp soy sauce
Add 1 Tbsp of worcester sauce
Add 2 Tbsp of tomato puree
Add 1 cup of frozen peas
If using the beef at this point place it in a frying pan and give it a good browning
Add the quorn mince or the minced beef to the main pan
Cook for 10 minutes whilst stirring
Boil a kettle andmake 2 cups (500ml) of stock
Add stock to pan and bubble for 10 minutes
Remove potatoes place in a large bowl and mash
Add 4 Tbsp of greek yogurt to the mash and mix in
Grate 100g of cheddar cheese onto the top and cook in the oven @ 200C for 15 minutes
