Ingredients

  • Onion (1 med)
  • Red Pepper (1 med)
  • Sweet Potato (1 med)
  • Oil (1 Tbsp)
  • Green Beans (120g)
  • Sweet Corn (150g)
  • Tomato Puree (2 Tbsp)
  • Barbecue Seasoning (1 Tbsp)
  • Cheddar Cheese (120g)
  • Potatoes (450g)

Method

Chop 1 medium onion
Chop 1 red pepper
Chop 1 medium sweet potato
Put 1 Tbs of oil in large casserole pan/ dutch oven and place onion pepper and sweet potato in pan cover and sweat for 5 minutes
Slice 450g of potatoes about ¼ inch thick and place in a separate saucepan and cover potatoes with water
Bring to the boil bubble for 5 Minutes then drain
Trim 120g of green beans and add to casserole pan
Turn on the oven to 200C
Add 1 can of baked beans to the casserole pan
Add 2 Tbs of tomato puree to the casserole pan
Add 150g of sweet corn to the casserole pan
Add 1 Tsp of barbecue seasoning to the casserole pan and get it bubbling and leave for 10 minutes covered
Chop 120g of cheddar cheese into small cubes and add to casserole pan
Top the casserole pan contents with the sliced potato
Place a little more grated cheese on top of potato place in the oven until the cheese has melted and maybe slightly crisped
