Ingredients
Brown Rice (200g)
Chickpeas (1 can)
Spring Onions (batch)
Tuna Fish (1 can)
Cheese (180g)
Artichoke Hearts (1 can)
Olive Oil (4 Tbsp)
Lemon (1)
Fresh Parsley
Replace Artichoke with Dill Pickle if unavailable
Method
Add 200g of brown rice to a saucepan
Cover with water heat up and then simmer
Rinse a can of chickpeas and add to a large salad bowl
Chop a bunch of spring onions and add to bowl
Drain a can of tuna and add to the bowl
Grate 180g of cheese into the bowl
Take can of artichokes and chop up and add to bowl
Do same with dill pickles if no artichokes
Add the cooked rice to the bowl and mix it up
Mix 4 Tbsp of virgin olive oil with the juice of 1 lemon
