Tagine North African style dishFairly sweetQuickly put togetherNice with a bit of flatbread(Made and tested 19 times)2 servings Ingredients Canned tomatoes (1 can)Harissa paste (2 Tbs+)Dried apricots (100g)Chickpeas (1 can)Red lentils (1/2 cup)Greek Yoghurt (topping opt)Sweet potato (1 med)Courgettes (1)Red pepper (1 med)Onion (1 med)Garlic (4 cloves)Dried coriander (1 tsp)Cumin (1 tsp)Stock (2 cups/500ml)Oil (1 Tbs) Method Put 1 Tbs of oil in a large pan Chop 1 sweet potato Chop 1 red pepper Chop 1 courgette Slice 1 onion Crush 4 cloves of garlic Add all the above veg to a large pan Add 1 tsp of dried coriander Add 1 tsp of cumin Place lid on pan, heat up then turn low and sweat for a few minutes Boil a kettle and make 500ml/2 cups of stock Add stock to the pan Add 1/2 cup of red lentils Get it bubbling. Turn down low.
