Split Pea Soup


Simple savoury comfort
With a medley of vegetables

Ingredients

  • Stock (6 cups)
  • Split Peas (225g)
  • Onions (1 med)
  • Oil (1 Tbs)
  • Leeks (2)
  • Celery (3 Stalks)
  • Carrots (1 med)
  • Potatoes (2 med)

Method

Boil the kettle and make 6 cups of stock
Place stock in large pan
Add 225g of split peas and get it bubbling
Cook for 15 minutes
Slice up 2 medium onions
Slice up 2 leeks
Chop up 3 sticks of celery
Melt 1 Tbsp of oil in large frying pan
Add onion leek celery cover and sweat for 5 minutes
Chop 1 medium carrot
Chop 2 medium potatoes
Add carrot and potato to split peas in large pan
Add onion leek celery to saucepan and get it bubbling
Simmer for 30 minutes covered
Remove half and blend or use wand and return to pan if you want a thick soup
