Haloumi Brekky


This is just my favourite breakfast

I think it beats even the satisfaction of a general fried breakfast
Of course it is a main meal also

It weighs in a bit on the fat
But it will balance out over the week
Remember moderation
And this is also one of the most nutritious meals on the menu

1 Serving

Ingredients

  • Halloumi (4 x 6mm slices)
  • Potato (1 med)
  • Onion (1 med)
  • Spinach (1 handful)
  • Wholemeal Bread (1 slice)
  • Mayonnaise (1  Tbsp)
  • Greek Yogurt (1 Tbsp)
  • Curry Powder (1 Tsp)
  • Lemon (½)
  • Oil (1 Tbsp)
  • Butter (1 Tsp)
  • Eggs (1 med)

Method

Heat up a pan of water
Slice up a med potato into 6mm thick slices
Drop potato into water pan and boil for 5 minutes
Heat up 1 Tbsp of oil in a large frying pan
Chop 1 med onion and add to the frying pan
Cook onion until soft
Then add 1 Tbsp of medium curry powder and mix
Drain potatoes and add to the frying pan with the onions
Add a little oil to a small small frying pan and heat up
Slice 4 pieces of haloumi and add to the frying pan and brown on both sides
Add a handful of spinach to the main frying pan and mix in until it wilts
Make a slice of wholemeal toast
Add 1 Tbsp of mayonnaise to the plate
Add 1 Tbsp of greek yogurt to the mayonnaise and mix into a pool
Add the potato onion spinach to the plate and sprinkle with the juice of half a lemon
Add the haloumi to the plate
Quickly fry an egg and add to the plate
