Ingredients
Chickpeas (1 can)
Celery (2 stalks)
Spring Onions (1 bunch)
Dill Pickles (1/2 cup)
Red Pepper (1 med)
Rocket/Arugula (handful)
Mayonnaise (3 Tbsp)
Garlic (3 cloves)
Mustard (1/2 Tbsp)
Lemon Juice (2 Tbsp)
Salt (1/4 tsp)
Dried Dill (1 Tsp)
Method
Rinse a can of chickpeas and add to a large bowl
Mash the chickpeas
Finely chop 2 stalks of celery and add to the bowl
Finely chop 1 red pepper and add to bowl
Chop 1/2 a cups worth of dill pickles and add to the bowl
In a cup or mug add 3 Tbsp of mayonnaise
Then crush 3 cloves of garlic and add it to the mug
Add to the mug 1/2 Tbsp of mustard
Then the juice of 1 lemon
And 1/4 of a tsp of salt
