Chickpea Salad Mix

Very quick to put together

  • Chickpeas (1 can)
  • Celery (2 stalks)
  • Spring Onions (1 bunch)
  • Dill Pickles (1/2 cup)
  • Red Pepper (1 med)
  • Rocket/Arugula (handful)
  • Mayonnaise (3 Tbsp)
  • Garlic (3 cloves)
  • Mustard (1/2 Tbsp)
  • Lemon Juice (2 Tbsp)
  • Salt (1/4 tsp)
  • Dried Dill (1 Tsp)


Rinse a can of chickpeas and add to a large bowl
Mash the chickpeas
Finely chop 2 stalks of celery and add to the bowl
Finely chop 1 red pepper and add to bowl
Chop 1/2 a cups worth of dill pickles and add to the bowl
In a cup or mug add 3 Tbsp of mayonnaise
Then crush 3 cloves of garlic and add it to the mug
Add to the mug 1/2 Tbsp of mustard
Then the juice of 1 lemon
And 1/4 of a tsp of salt
Add the the dressing mix to the bowl and mix it in
Sprinkle with a tsp of dried dill
Serve with a handful of rocket/arugula
