Sausage and Cauliflower Cheese


Super comforting cauliflower cheese
Quick and tasty
Have it with any protein really
Switch the veggie sausage for real ones
Or have chicken or white fish
(Made and tested 10 times)

Ingredients

  • Cauliflower (1 medium)
  • Butter (3 tbsp)
  • Flour (3 tbsp)
  • Whole or plant milk (1 1/2 cups)
  • Mustard (2 tsp)
  • Cheedar cheese (70g)
  • Oil (1 tsp)
  • Veggie Sausages (4)
  • Peas (1 cup)

Method

Trim a cauliflower of base and leaves
Break up into florets large and small
Boil kettle add water to pan
Boil cauliflower for 5 minutes
Heat oven to 200C
Melt 3 tbsp of butter in a saucepan
Add 3 tbsp of flour to the saucepan and mix to a stodge
Add 1 1/2 cups of milk to saucepan and stir until it starts to thicken
Add 2 tsp of mustard to saucepan
Grate 70g of cheddar cheese and mix in to saucepan
Drain cauliflower and add to an oven dish
Cover cauliflower with the sauce and place in the oven for 10 minutes
Put 1 tsp of oil in a small frying pan
Add 4 Veggie Sausages (or 2 if cooking for one) cover and cook
Option here to change for chicken or fish
Boil a kettle
Add 1 cup of peas to a saucepan and cover with hot water (½ cup if cooking for one)
Put together when all ready
