A baked potato can go with many things And there are a few more in the menu This particlar version is just a popular one And the potatoes repacked for extra flavour (Made and tested 23 times) 2 servings
Ingredients
Potatoes (2 large)
Nutritional Yeast (1 tbsp)
Greek Yoghurt (1/4 cup)
Cheddar Cheese (50g)
Tuna (1 can)
Mayonnaise (1.5 tbsp)
Fresh Parsley chopped(3 tbsp)
Method
Take 1 large potato and skewer with a fork or knife several times
Rub potato in oil and a little celery salt (or salt)
Place in the oven at 220C for about an hour
Open and drain a can of tuna. Place in a bowl and mix with 1.5/2 tbsp of mayonnaise
When potato are ready remove from the oven and cut in half
Scoop out the potato and place into a large bowl
Add 1/4 cup of greek yoghurt to the bowl
Add 1/2 cup of grated cheddar cheese to the bowl
Add 1 Tbsp of nutritional yeast to the bowl and mash it all up
Refil the potato cases with the bowl mixture
Place potato on the plate and top with the tuna mix
