Spicy Sauerkraut Stew


The zing of the sauerkraut

The comfortable potato and beans
And the overall spicy bite

2 Servings

Ingredients

  • Onion (1 med)
  • Oil (1 tsp)
  • Celery (2 stalks)
  • Carrots (1)
  • Potatoes (500g)
  • Cannelini Beans (1 can)
  • Quinoa (1/2 cup)
  • Sauerktaut (1 cup)
  • Chilli Flakes (1 tsp)
  • Stock (2 cups/500ml)

Method

Put 1 tsp of oil in a large saucepan
Chop 1 med onion and add to pan
Chop 2 stalks of celery and add to pan
Heat up until onion and celery soften
Add 1 tsp of chilli flakes and take off the heat
Chunky Chop 1 carrot and add to pan
Chop 500g of potatoes and add to the pan
Boil a kettle and make 2 cups (500 ml) of stock
Add to the pan and get it bubbling
Rinse out a can of cannelini beans and add to the pan
Add 1/2 cup of quinoa
Get it bubbling the cover and cook on low for 20 minutes
Add 1 cup of sauerkraut and continue on low for a few minutes
